La Chipotlera is all about starting a flavour revolution in Spain. It's a "seed to bottle" concept, whereby everything is grown, cooked and packaged at their in-house facilities.
The brand is inspired by the cuisine of Mexico, where the seeds the brand uses originate from.
They take preparation very seriously and respect the rhythms of nature. They also look to ancestral Mexican techniques to create the sauces. They use their hands in the process and smoke in the only chipotlero oven in Europe.
Most importantly, they do it slowly. The fermentation process take a total of two years. The smoking process takes three days and they use holm oak wood, which is responsible for the incredible and unique flavour characteristics of their products, which include Salsa Llorona, Salsa Ruda, Salsa Genial and Salsa Negra, which are all available on House of Habanero.
Growing Mesoamerican products in the heart of Castilla is a challenge only suitable for the brave, but they do it with deep respect for the natural environment.
