Lacto-fermentation is where the magic happens, unlocking deep flavour, natural acidity, and umami complexity. This sauce is a perfect example. While bright and refreshingly cucumber-forward, its savoury depth comes from miso and shiitake mushrooms, creating layers that open up with every taste.

Fermented and aged for 60 days with rice vinegar, it’s a beautifully balanced blend of tang, umami, and elegant funk, a true showcase of fermentation craftsmanship.

Ingredients

Cucumber, red & green chillies, miso (soy), rice vinegar, onion, ginger, salt, garlic, salt, dried shiitake mushrooms.
