This sauce boasts one of the most fascinating ingredients we've ever encountered: native green ants from New South Wales in Australia. Yup, real ants. They are sustainably harvested, then pickled and added whole to the sauce, providing natural scents of coriander, lime and lemongrass for a tangy, satisfying finish.
The ants are paired with locally foraged thyme, wild fennel picked from the surrounding hills and fresh green apples, all fermented together for two months, and enhanced by the fiery kick of long-fermented jalapeño and habanero chillies. The result is a savoury, complex and utterly delicious sauce.
