A daring collaboration between La Pimenterie and Piko Peppers, San Pasilla is where Oaxaca meets Osaka, a masterful fusion of Mexican smoke and Japanese depth. This extraordinary sauce combines the smoky aroma of Oaxacan Pasilla peppers, the fiery punch of Habanero, and the rich umami of moromi, the fermented base used in soy sauce and miso.
Somewhere between a mole negro and a Japanese BBQ glaze, it offers a captivating balance of sweetness, spice, and smoke. It's layered, complex, and easily one of the tastiest sauces in our repertoire.
